Pumpkin flavored things are all the rage come autumn. I don't consider myself to be a huge fan of pumpkin, but these cookies are definitely an exception. The subtle pumpkin flavor with classic chocolate chips make this recipe a hit at any party! And to top it off, its an overall quick bake from start to finish, and the ingredients are kitchen staples, making it the perfect last minute dessert to bring with you to an event!
Ingredients:
- 1 c pumpkin puree
- 1 c granulated sugar
- 1/2 c canola or vegetable oil
- 1 tsp vanilla
- 1 lage egg
- 2 c flour
- 2 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp salt
- 1 tsp baking soda
- 1 tsp milk
- 1 c chocolate (milk or dark chocolate)
- 1 c chopped walnuts (optional)
1. Preheat oven to 375 and line cookie sheets with parchment paper.
2. Mix pumpkin, sugar, oil, vanilla, and egg with stand mixer.
3. With a fork, mix the flour, baking powder, cinnamon, and salt in a separate bowl.
4. Dissolve the baking soda in the milk in a small bowl.
5. Add the dry and wet baking soda mixture to the pumpkin mixture.
6. Stir in the chocolate chips and chopped nuts until combined evenly.
7. Form mounds of cookie dough on the prepared cookie sheets using a medium cookie scoop (about 1 1/2 Tbs)
8. Bake for 10 to 12 minutes. Let cookies sit on cookie sheet for 2 minutes before moving to a wire rack to cool completely.
